  • 1 pound (450g) sausage (Italian pork sausage recommended, or chicken/turkey sausage)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut sweet potatoes into 1-inch cubes. Toss in a mixing bowl with olive oil, salt, and pepper until evenly coated.
  3. Spread sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through, until tender inside and slightly crisp on edges.
  4. While potatoes roast, heat a large skillet over medium heat. Remove sausage from casings if needed and crumble into the pan. Cook for 8-10 minutes, stirring occasionally, until browned and cooked through. Drain excess fat if necessary.
  5. In a small bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, and red pepper flakes if using.
  6. Add roasted sweet potatoes to the skillet with the sausage. Pour honey garlic sauce over and toss gently over medium heat for 2-3 minutes until sauce thickens and coats everything.
  7. Remove from heat, garnish with chopped fresh parsley, and serve immediately.

Notes

If sauce is too thin, cook longer on medium-low heat to reduce and thicken. Do not overcrowd pan when tossing to allow sauce to cling properly. For gluten-free, use tamari instead of soy sauce. Optionally add parmesan before serving for a dairy twist. Fresh parsley garnish adds color and freshness.
