- 2 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1 pound (450g) sausage (Italian pork sausage recommended, or chicken/turkey sausage)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 3 cloves garlic, minced
- 3 tablespoons honey
- 2 tablespoons soy sauce (low-sodium preferred)
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon red pepper flakes (optional)
- A handful fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and cut sweet potatoes into 1-inch cubes. Toss in a mixing bowl with olive oil, salt, and pepper until evenly coated.
- Spread sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through, until tender inside and slightly crisp on edges.
- While potatoes roast, heat a large skillet over medium heat. Remove sausage from casings if needed and crumble into the pan. Cook for 8-10 minutes, stirring occasionally, until browned and cooked through. Drain excess fat if necessary.
- In a small bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, and red pepper flakes if using.
- Add roasted sweet potatoes to the skillet with the sausage. Pour honey garlic sauce over and toss gently over medium heat for 2-3 minutes until sauce thickens and coats everything.
- Remove from heat, garnish with chopped fresh parsley, and serve immediately.
Notes
If sauce is too thin, cook longer on medium-low heat to reduce and thicken. Do not overcrowd pan when tossing to allow sauce to cling properly. For gluten-free, use tamari instead of soy sauce. Optionally add parmesan before serving for a dairy twist. Fresh parsley garnish adds color and freshness.
