Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut 1.5 pounds of carrots into sticks about 3 inches long and 1/2 inch thick.
  3. In a large mixing bowl, whisk together 2 tablespoons olive oil, 2 tablespoons honey, 2 minced garlic cloves, 1 teaspoon dried thyme, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Add 1 teaspoon lemon juice if using.
  4. Add the carrot pieces to the bowl and toss until evenly coated with the glaze.
  5. Spread the carrots in a single layer on a rimmed baking sheet lined with parchment paper or a silicone mat.
  6. Roast in the preheated oven for 20 minutes, flipping the carrots halfway through (around 10 minutes) to brown evenly.
  7. Check for doneness; carrots should be tender and have a glossy, golden-brown glaze. Roast an additional 5 minutes if needed, watching carefully to avoid burning the honey.
  8. Remove from oven and sprinkle with freshly chopped parsley or smoked paprika if desired.
